15 MINUTE HEALTHY ROASTED CHICKEN AND VEGGIES (VIDEO)

This is a long time favorite recipe of mine and I can not believe I have not shared it. It is a"one pan" type of dish where you essentially place everything in the pan and bake. Later, there is a dinner platter prepared. The main reason is cut into the temperature and bite size pieces. The results are chicken and vegetables.

This is great when you are of phoning out on the edge and are hungry but idle. Pop chicken and these veggies they will be prepared before the takeout is supposed to arrive. Additionally, they're 1000x tastier and healthier. Serve these veggies with a side of quinoa, rice, or bread.

Inḡredients
  • 2 medium chicken breasts chopped
  • 1 cup bell pepper chopped (any colors you like)
  • 1/2 onion chopped
  • 1 zucchini chopped
  • 1 cup broccoli florets
  • 1/2 cup tomatoes chopped or plum/ḡrape
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon italian seasoninḡ
  • 1/4 teaspoon paprika optional
Directions
  1. Preheat oven to 500 degree F.
  2. Chop all of the veggies into Big pieces.
  3. Board chop the chicken. Put veggies and the chicken in a medium roasting sheet or dish pan. Add paprika, salt and pepper seasoning, and the oil. Toss to combine.
  4. Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with a salad, pasta, or rice.
