20 Minute Healthy Chicken Burrito Recipe

A quick and easy weeknight dinner recipe that will please the whole family – 20 Minute Healthy Chicken Burrito Recipe
Recipe Yields: 3 Full Size Burritos

  • 3 larḡe flour tortillas
  • 1 lb boneless skinless chicken breast, chopped into bite size pieces 
  • 3/4 cups black beans, drained and rinsed (a little less than a whole can)
  • 1/2 medium yellow onion, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • cookinḡ spray
  • 6 tablespoons Mexican cheese blend, shredded
  • 3 tablespoons salsa, plus more for ḡarnish
  • 3 tablespoons sour cream, plus more for ḡarnish
  1. Spray a large skillet with cooking spray and heat on medium/high heat. Add chicken, onion, chili powder, and cumin and cook for 2 minutes or until chicken is done. Add beans while stirring, and cook 1 minute and remove from heat.
  2. Laying on flour put 2 tablespoons cheese in center add 1/3 of the chicken mixture then add cream, and 1 tbsp of salsa. Roll tortilla in a jelly roll style does not fall out. Place seam side down and repeat with two tortillas that are next.
  3. Heat a grill skillet over medium/high heat and spray with cooking spray. Place tortillas into pan, seam side down. Cook for 3-4 minutes, until golden brown on bottom side, flip and continue cooking on that side . Remove from skillet and place or plates to serve.
  4. Serve with guacamole, salsa, hot sauce, a side of sour cream, or whatever toppings your family favors
