DETOX IMMUNE-BOOSTING CHICKEN SOUP

With the new year in full swing, not only are we kicking off our diets and trying to stay warm but we are also fighting with colds coughs and the FLU season. This Detox Immune-Boosting Chicken Soup is the best cure for flu and cold season, but it is also full of a great deal of antioxidants and nutrients that boost your immunity and keep you cozy and warm all winter long! With ingredients such as mushrooms, chickpeas, turmeric, garlic and dark greens simmering in a broth that is hot, I mean, you will make certain to fend off those pesky colds while remaining healthy and on track with your diet!

INGREDIENTS
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 3 larḡe celery stalks, chopped
  • 2 larḡe carrots, peeled and chopped
  • 1 cup mushrooms, sliced
  • 10 cloves ḡarlic, minced
  • 8 cups chicken stock
  • 2 bay leaves
  • ½ tsp. turmeric
  • ½ tsp. crushed red pepper
  • 1½ tsp. sea salt
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 cups shredded rotisserie chicken
  • 2 cups baby kale leaves
INSTRUCTIONS
  1. In a large pot or dutch oven, heat oil over medium-high warmth and sauté onion, carrots and celery, stirring occasionally, about 5 minutes. Add garlic and mushrooms, cooking another 3 minutes.
  2. Stir in the chicken stock, bay leaves, garlic, crushed red pepper, salt and chickpeas; bringing to a boil. Mix in shredded chicken, cover and turn down heat to a simmer for 15 to 20 minutes.
  3. Add kale, cover and simmer another 5 minutes. Bay leaves, enjoy and serve!
