Teriyaki Chicken Casserole

First off, I must say I must give top charge with this recipe to Carrian from the food! If you're currently searching to feed your family- this is it!

This Teriyaki Chicken Casserole is the kiddos too and one that you'll love.

I believe casseroles get a bad rap, and I can see why. When they are packed with a whole lot of cream-of-whatever soups and ingredients everyone loves to hate. (I use them but not all of the time.) For me however, I love a good casserole. As a side or main dish. They are reassuring, generally and yummy pretty easy to whip up. I love that.

INGREDIENTS
  • 3/4 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup brown suḡar
  • 1/2 teaspoon ḡround ḡinḡer
  • 1/2 teaspoon minced ḡarlic
  • 2 Tablespoons cornstarch + 2 Tablespoons water
  • 2 small boneless skinless chicken breasts
  • 1 (12 oz.) baḡ stir-fry veḡetables (Can be found in the produce section)
  • 3 cups cooked brown or white rice
Directions
  1. Preheat oven to 350° F. Spray a 9x13-inch skillet with non-stick spray.
  2. Blend soy sauce, 1/2 cup water, brown sugar, garlic and ginger in a small saucepan and cover. Bring to a boil over moderate heat. Remove and cook for a minute.
  3. Meanwhile, stir together the corn starch and 2 tablespoons of water in another dish until smooth. Once sauce is boiling, add mixture and stir to blend. Cook until the sauce begins to thicken remove from heat.
  4. Place the chicken breasts in the prepared pan. Pour of the sauce on top of chicken. Place chicken in oven and bake 35 minutes or until cooked through. Remove in the dish.
  5. *Meanwhile, cook or steam the vegetables according to package instructions.
  6. Add the cooked vegetables and cooked rice into the casserole dish with the chicken. Add the majority of the sauce, reserving a little when serving to drizzle over the top. Toss everything together in the dish. Return to oven and cook 15 minutes. Remove from oven and let stand 5 minutes. Drizzle each serving with remaining sauce. Enjoy!
