Bacon and Zucchini Eggs in a Nest – Low Carb

Welcome to zucchini week!  it’s going to be all zucchini ALLLLLLLL the time this week here on iBiH!

Í and season've got you covered low recipes which can be used for any meal that was just about, and of course dessert!

Incidentally, zucchini is another weird word which appears increasingly wrong the more you form it and/or stare at it -- true i just realized as i've typed it 5 times currently in this article and i needed to go open a tab and be sure i was spelling it right!


Recipe adapted from here
  • 4 cups zucchíní noodles or shreds
  • 4 slíces raw bacon
  • 1/2 cup grated Asíago cheese
  • 4 eggs
  • Salt and pepper to taste

  1. Cut your bacon slices in half, then cut them lengthwise into 1/4 inch thick bits -- such as bacon noodles.
  2. In a heavy skillet, cook the bacon for around 3 minutes.
  3. Add the zucchini and mix well. Season with pepper and salt and simmer making four depressions for the eggs.
  4. Sprinkle with the Asiago cheese.
  5. Break 1 egg into each dent.
  6. Cook medium-high heat for approximately 3 minutes, then cover and cook for an extra 2-4 minutes, or until the eggs are cooked to your liking and the bottom is crispy. Serve hot.
