Cheesecake Cookies (Re-do)

These Cheesecake Cookies are so creamy and tender. It’s a delicious cookie that’s not too sweet but totally addictive!

Cheesecake Cookies are among my favorite cookie recipes. They're so good! Back when they were made by me I dipped them in chocolate that made them even more tasty. Give them a coating of sugar and instead this version I chose to skip the chocolate.

This recipe was trapped over 1 MILLION times and has been the cookie on my website since the invention of it. Some bakers have had trouble with the cookies that they came out like biscuits or they weren't sweet enough, the batter was too sticky to work with.

I set some time aside to work testing it for all those things that were specific. I didn't do much to tweak the recipe. I will address all these issues in this post.

Ingredients
  • 8 oz cream cheese room temperature
  • 1/2 cup butter room temperature
  • 1 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Powdered Sugar
INSTRUCTIONS
  1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
  2. Beat cream cheese and butter together at high speed until smooth and fluffy; 1-2 minutes. Add sugar and beat until fluffy and incorporated; 1-2 minutes. Beat in vanilla and the eggs; 1 minute.
  3. In another, medium-sized bowl, whisk together the flour, baking powder and salt. Add the dry ingredients and stir until incorporated. Do not over-mix.
  4. Drop by rounded tablespoons onto the prepared baking sheets about 2 inches apart; batter will be sticky. You can set the batter in the refrigerator for 10-20 minutes to help a little firms up.
  5. Bake at 350 degrees for 10-11 minutes. Cookies should be not browned, light in colour, and just starting to brown on the bottom. *Length of time may differ from oven.
  6. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  7. If desired, sprinkle with powdered sugar or dip in chocolate after chilled.
