Cucumber Greek Salad

This Cucumber Greek Salad is light and refreshing, and full of healthy ingredients. With minimal prep, it makes an easy side dish for any meal!
Hey there, y’all! I shared this recipe right at Kenarry: Suggestions for the House over before the 4th of July. Carrie and I did a recipe swap of barbecue side dishes that are simple, and she here shared her recipe. In case you have not had a chance to yet Make certain to check it out!

This Cucumber Salad makes a terrific side dish to serve especially, and at any meal during the summer barbecues. When there's plenty of desserts and dishes that are significant to chow down on I like to prepare a more healthy alternative.

It's wonderful to have a side to balance out everything, and this Cucumber Salad that is Greek fits the bill!

This salad is so simple to throw together. The toughest part is chopping the veggies, and that only takes about five minutes. Add some spices, lemon juice, olive oil, and feta, and you're all set to go.

Cucumber Greek Salad

Ingredients
  • 2 cucumbers, peeled and chopped into 1/4 slices
  • 4-6 Roma tomatoes, chopped
  • 1/2 of a red onion, sliced
  • 1/4 cup olive oil
  • 1 1/2 Tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1/2 cup crumbled feta cheese
  • Salt and Pepper, to taste
  • Black olives, pitted and sliced (to taste)
Directions
  1. In a large bowl, combine cucumbers, tomatoes, and onions.
  2. In a smaller bowl, combine the olive oil, lemon juice, and dried oregano. Pour over and mix well. Season salad with salt and pepper.
  3. Sprinkle feta cheese and olives on the top of salad and mix. Taste and adjust spices if need be. Refrigerate until ready to eat. Enjoy!
