Gorilla Bread – Low Carb, Keto, Gluten & Sugar Free

I was raised making Cinnamon Pull Apart Bread. It is one. I cut each circle into four pieces would open a can of biscuit dough, dip each in butter, roll them and place layers of these. After I got married I turned into a Paula Deen fan. Her Gorilla Bread is my Cinnamon Pull Apart Bread. Amazing.

ìngredìents
Toppìng ìngredìents:
  • 1 tsp butter
  • 1/2 cup Trìm Healthy Mama Gentle Sweet or my sweetener
  • 2 tsp cìnnamon
  • 1/2 cup pecans optìonal
Dough ìngredìents:
  • 8 oz mozzarella
  • 1 tbsp butter
  • 1 oz cream cheese
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup ground golden flax or addìtonal almond flour
  • 1 egg
  • 1 tbsp Trìm Healthy Mama Gentle Sweet or my sweetener
  • 2 tsp bakìng powder
  • 1 tsp vanìlla
Fìllìng ìngredìents:
  • 7 oz cream cheese
  • 2 tbsp melted butter
Sauce ìngredìents: (optìonal)
  • 2 tbsp butter
  • 2 tbsp heavy cream
  • 1/4 cup Trìm Healthy Mama Gentle Sweet or my sweetener
  • 1/2 tsp vanìlla
  • pìnch of salt
Directions
  1. Preheat the oven to 350.
  2. Spread 1 t butter. Mix the 1/2 cup sweetener with the cinnamon. Sprinkle 1 tsp of the in the pie plate. Set aside. Sprinkle the pecans on top (if using).
  3. (optional) Combine the first three sauce ingredients and cook over medium low heat until bubbly, slightly cracked, and lightly browned. This will takes about 5 minutes. During baking it will thicken. Remove from the heat and add the extract and salt. Set aside.
  4. Place the mozzarella and one ounce of cream cheese in a microwave safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point of the cheese should be melted. Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this stage ). Add the remainder of the cheese and the ingredients . Mix with the blade. You can combine in a medium bowl if you don't have a food processor but you might want to dump it and knead it to incorporate the ingredients. Once it's a shade press it out on a sheet of parchment into a 12 ish rectangle and wet your hands.
  5. To assemble: Cut the dough into 24 pieces. Cut the cream cheese. Sprinkle each piece of dough. Place a block of cream cheese wrap and seal the dough. Dip the ball. Roll it. Place in the pie plate. Repeat with all 24 pieces. (If you've got additional sweetener sprinkle it on top. If you run from the sweetener before you're done just mix a little more).
  6. Drizzle the sauce over the top, if using.
  7. Bake at 350 45-50 minutes until the rolls are golden brown and the sweetener is bubbling. Cool for 10 minutes. Invert onto a serving plate. Try not to eat them all .
