Lemon Cheesecake Mousse

I went a little mad another week purchasing Jello. I had a few coupons and it was available and could not pass the chance up. With my deal Jello, I had to come up to use it. Jello that I will wind up doing when John can not eat solid food and goes in for his surgery could be made by me. However, I thought that's a bit blah. I settled on creating mousse! I included a package of cream cheese to make it oh so unique and creamy. Not light on calories, but it is worth every bite!

  • 1 packaǵe (4 servinǵ size) lemon Jello
  • 1/2 cup boilinǵ water
  • 1 packaǵe (8oz) cream cheese, softened
  • 1/2 cup cold water
  • 1 cup Cool Whip
  • berries, for ǵarnish
  1. Add lemon Jello into a bowl and pour into the boiling water.
  2. Stir until Jello is dissolved.
  3. Pour Jello mix into a blender. Add cream cheese and water and mix for 1 minute or until smooth.
  4. Pour mixture into a large bowl and add in Cool Whip. Mix together until smooth and well blended.
  5. Spoon into four to six dessert dishes (depends on how complete you need them). Place in the refrigerator for 2 hours.
  6. When ready to serve, top with berries or Cool Whip.
