Low Carb Coconut Pudding (Paleo, Keto)

Cold Sugar Free Pudding in any season is scrumptious, but on a much more important part in my life it takes in summer time. Perfect store in the refrigerator for one of the children asks for a bite and to make it. It is sugar free pudding! It free, it is low carb and it is super simple! Really does not get better than that to get a keto pudding dessert that is creamy !

You simply want a treat to have in the refrigerator for your family this summer or whether you will need a dairy dessert for a friend, you will not be disappointed with this sugar free coconut batter.

  • 27 oúnces Coconút milk únsweetened, canned
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3 tsp gelatin
  • 1 tsp Coconút liqúid stevia
Optional Toppings
  • 1 cúp whipped coconút cream
  • fresh berries, únsweet coconút flakes
  1. Put the milk in a sauce pan over medium heat. Bring to a boil while stirring to eliminate lumps.
  2. Once boiling scatter in gelatin and reduce heat. Continue to stir for approximately 10 minutes until mixture reduces and thickens.
  3. After 10 minutes, remove from heat and stir in remaining ingredients. Taste and adjust stevia if necessary.
  4. Pour into ramekins or 6 mason jars.
  5. Allow to cool 30 minutes then refrigerate. When ready to serve, top with sugar coconut cream that is whipped tomatoes and coconut flakes if desired.
