LOW CARB KETO PANCAKES

My families love of pancakes was well documented on this site through time, but never has a recipe been considered low carb or healthful .
Now that changes with these KETO PANCAKES!
Jorge and I have been performing the low-carb diet thing for some time, but we were desperately missing our beloved Sunday breakfast -- pancakes.
I was still whipping up pancakes for the women for breakfast and the odor was gradually KILLING me.


So I started off on the search for a pancake recipe which we look forward to eating and would love.

INGREDIENTS
  • 2 larǵe eǵǵs
  • 1 tablespoon water
  • 2 oz cream cheese, cubed
  • 2/3 cup almond flour
  • 1 teaspoon bakinǵ powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon Sweetleaf - stevia sweetener (or 2 tablespoons reǵular suǵar)
  • butter and syrup (suǵar free syrup for low carb option)
INSTRUCTIONS
  1. Add all ingredients to blender. Start with water and cream cheese and eggs that you don't have anything get trapped in the bottom.
  2. Blend until smooth, scraping down the sides if necessary. Let batter sit for two minutes.
  3. Heat a skillet to medium heat. Pour of batter.
  4. As soon as you begin to see small bubbles form, reverse and continue to cook until pancake is browned on each side. Continue till you've used all batter.
  5. Serve pancakes topped with butter and syrup!
