Easy Breakfast Casserole

Easy Breakfast Casserole has hash browns, ham, cheese, and eggs.  This hash brown breakfast casserole can be made overnight.  Perfect for Christmas breakfast!

It took me longer than it did for me to prepare this egg yolk to preheat my oven. I used shredded cheese frozen hash browns, and ham. The only prep work I needed to do was crack the eggs open.

This casserole will feed a crowd. 12 portions are made by it.

  • 24 oz. frozen hash browns -about 8 cups
  • 16 oz. cubed ham
  • 8 oz. sharp cheddar cheese -shredded
  • 12 large eggs
  • 1 cup mìlk -ì used skìm
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • cookìng spray
  1. Preheat oven to 350 degrees F.
  2. Add the frozen potatoes, ham, and cheese into a large bowl.
  3. Toss to combine. Pour into a baking dish that has been coated with cooking spray.
  4. In a large bowl, whisk the eggs with the milk, salt, and pepper (I use the identical bowl out of step 1).
  5. Pour the egg mixture over the hash brown mixture. Pat down everything with the back of a spoon.
  6. Bake for one hour, uncovered. The center needs to be set and the borders should be golden brown.
