Loaded Cauliflower Bites, covered in cheese and bacon, are a low-carb alternative to loaded potato skins or french fries, yet equally as delicious! This tasty appetizer has only 4 grams of net carbs per serving making it a great option for those following a keto diet as well!

I crave carbs. I do. I am constantly trying to think of new recipes without having remorse, where I can satisfy that craving. Once we eat out, one of my favorite appetizers is loaded potato skins. I love to recreate the foods that I'd normally eat out, at home, since we do not eat out much recently. It didn't take!

Based on the kind of diet you follow, this can be a recipe, a pleasure, or both. With only 4 grams of net carbohydrates per serving, this recipe is gluten free, suitable for those after a keto diet, and low carb.

  • 1 tablespoon olìve oìl
  • 1 head caulìflower cut ìnto bìte sìzed pìeces
  • salt and pepper to taste
  • 1 Cup cheddar cheese shredded
  • 4 slìces bacon cooked and crumbled
  • 2 green onìons slìced thìn, optìonal
  1. Preheat your oven to 350°F.
  2. Add the cauliflower pieces to a medium bowl with the olive oil and toss to coat.
  3. Spread out the cauliflower on a baking sheet and season with the pepper and salt.
  4. Roast for 20-30 minutes, or until fork tender.
  5. Remove the baking sheet from the oven and push All the cauliflower into a heap in the Middle.
  6. Cover the cauliflower with the cheddar cheese and bacon.
  7. Return the cauliflower into the oven and bale for an additional 5-10 minutes or until the cheese is melted.
  8. Remove from the oven and top with chopped green onions.
  9. Serve with a side of Ranch dressing or sour cream, if desired.
