Mediterranean One Pot Pasta

This easy Mediterranean One-Pot Pasta is packed with flavor, healthy vegetables, convenient canned foods, and can go from pantry to table in less than 30 minutes. Everyone will love this healthy pasta loaded with canned artichokes, olives, and fire roasted tomatoes, and simmered in a creamy herb-spiked vegetable broth.

ὶngredὶents
  • 1 8 ounce gluten free pasta corn/quὶnoa or chὶckpea/lentὶl*
  • 3 cups water boὶlὶng
  • 1 can vegetable broth
  • 1 can fὶre roasted tomatoes
  • 1 can artὶchoke hearts draὶned
  • 1 cup black olὶves
  • 1/2 purple onὶon slὶced
  • 2 tablespoons fresh thyme sub 1 teaspoon drὶed thyme
  • 1 teaspoon cumὶn
  • sea salt and black pepper to taste
  • parmesan to serve, optὶonal
  • basὶl to serve, optὶonal
INSTRUCTIONS
  1. Bring 3 cups to boil in a large pot.
  2. Add vegetable broth, pasta, onions, tomatoes, artichoke hearts, olives, thyme, and cumin.
  3. Permit the pasta to return to a boil over high heat, and stir the pasta and it starts to cook.
  4. Maintain the pasta in a boil, but decrease the heat a little as it continues to cook. Sometimes stir to keep the pasta from sticking to the bottom of the pot or sticking together.
  5. As the water reduces and becomes a sauce, await the pasta to become cooked. It is possible to thin the sauce by adding hot water if the pasta requires more cooking time.
  6. When the sauce as low, you can season with pepper and salt.
  7. When the pasta has cooked, remove from pot and add to dishes immediately to keep pasta from overcooking from the broth.
  8. Garnish with fresh herbs or parmesan cheese, and serve immediately.
