Sheet Pan Lime Chicken Nachos

Sheet Pan Lime Chicken Nachos - Easy to make, fun, delicious nachos baked on a sheet pan and loaded with beans, corn, chicken, and cheese! Perfect for entertaining a crowd!

These nachos have so.much.flavor. Just like a ridiculous amount. The tomatoes, the chicken the beans that are creamy, the corn!! It is all perfect! In case you did not notice, is a boatload of cheese, also.

The deal here is that you will find layers of proteins and vegetables in addition to our nachos. This is great for us.

ὶngredὶents
  • 2 to 3 (10 ounces) chὶcken breasts*
  • 2 tablespoons olὶve oὶl
  • 2 lὶmes juὶced
  • 1 lὶme zested
  • 1/2 teaspoon sugar
  • 2 garlὶc cloves mὶnced
  • salt and fresh ground pepper to taste
  • 6 low carb whole wheat flour tortὶllas** cut ὶnto trὶangle wedges
  • 1 cup canned sweet corn kernels, rὶnsed
  • 1 can BUSH’S® Black Beans, rὶnsed, dὶvὶded
  • 1 cup cherry tomatoes halved
  • 1 cup low fat shredded mexὶcan-blend cheese
  • 1 small red onὶon fὶnely chopped
  • 1 avocado chopped, for garnὶsh
  • parsley or cὶlantro, for garnὶsh
  • lὶght sour cream for servὶng
Directions

  1. Preheat oven to 350F.
  2. In a large bag, combine chicken, lime juice, lime zest, salt, sugar, pepper, and garlic and shake it until blended. Set aside for 10 minutes.
  3. Spray grill pan with cooking spray, and preheat on the stovetop over high heat for around one minute.
  4. Put chicken on the grill pan; cook 4 minutes on each side.
  5. Allow the chicken rest.
  6. Transfer chicken until chicken is cooked all of the way through.
  7. Cut on the flour tortillas and arrange on a lightly greased 11 x 13 baking sheet.
  8. The flour tortillas with cooking spray and bake for 8 to 10 minutes, or until lightly browned.
  9. Remove from oven and preheat the oven temperature.
  10. Tortilla chips with corn tomatoes ® Black Beans, ready chicken, and cheese.
  11. Bake nachos for 15 minutes, or until heated through and cheese is melted.
  12. Remove from oven and garnish with parsley or cilantro, avocado, and chopped onions.
  13. Serve with sour cream on the side.
