Yummy Blueberry & Lemon Fudge with creamed coconut (4 ingredients)

A delicious, alternative fudge recipe using creamed coconut, blueberries, lemon and maple syrup.

Lemon and blueberries are a match made in heaven. They dance and twirl on the taste buds producing an exquisite medley of tastes. I've added them to one of my all time trusted and ingredients that were favorite:'creamed coconut', to make a soft fudge.

It is very rich, yet you needn't feel guilty, because all the ingredients are good for you. It's easy to feel satiated with two or one squares .

They make present or an exceptional treat, and with only 4 ingredients, are easy and fast to make.

Yummy Blueberry & Lemon Fudge with creamed coconut (4 ingredients)
  • 300g creamed coconut (or coconut butter)
  • 75g to 100g organíc blueberríes (frozen works best for colour)
  • 1 heaped teaspoon fresh lemon rínd
  • 2 tablespoons maple syrup
  1. Allow your blueberries to defrost a bit beforehand.
  2. Roughly chop your creamed coconut cube.
  3. Melt the creamed coconut block on a cooker or stove top by placing the creamed coconut (or coconut butter) in a small, oven proof, glass bowland then by placing that bowl in a small pan comprising a inch or so of warm water. Maintain the burning. The bowl will be then transferred through by the heat . Give it regular stirs to help the procedure that is melting. Don't keep it to the heat.
  4. Grate a teaspoon worth of unwaxed, organic lemon rind.
  5. Once melted add the blueberries, lemon rind and maple syrup and blend together. I find this easiest to do using a hand (immersion) blender. This makes up the cleaning process much simpler. If your glass jar is too large to get in there with the hand blender, you might need to move it. This would work with a food processor.
  6. Note: If you are using frozen blueberries, then you will have to defrost them before mixing otherwise they will set your melted coconut until you blend it. You could toss them when the coconut are melting. Frozen blueberries appear to work best for shade.
  7. Press down the blended mixture to a parchment paper lined loaf tin and then pop it in the freezer for around 20 to 30 minutes to solidify. Alternatively pop it and give it a little more time to turn solid.
  8. After business, slice into squares or triangles.
  9. It's possible to enjoy this right from the freezer as a very firm'fudge-like' treat or from the refrigerator as a stunning soft fudge.
