Keto Cranberry Orange Bread Recipes

This Keto Cranberry Orange Bread is a staple during the holiday season. It’s so moist, delicious, and perfect with a cup of hot coffee.

Among my favorite loaves of bread besides pumpkin is Cranberry Orange Bread. There was a gentleman near by, and I'd stop there to catch a loaf that was tasty to surprise my children. It closed down years ago, but my son hasn't forgotten his bread. He has been asking when I could make a homemade Cranberry Orange Bread, so I decided to make it a low carb version. This bread isn't keto because oranges are high in rest assured there were no oranges, if you're already thinking. I used pure extract, which worked! I used cranberries, which can be high in fiber and low in carbohydrates . Having never cooked with fresh cranberries I was not certain because cranberries are tart this recipe was going to turn out. I added a bit Monkfruit Powdered and it was the perfect level.

Low Carb Cranberry Orange Bread doesn’t require a lot of steps. It is a quick bread than even an inexperienced baker can easily make.

Keto Cranberry Orange Bread Recipes
íngredíents
  • 5 eggs
  • 1 egg yolk
  • 9 tbsp butter, melted
  • 2/3 cup Lakanto Monkfruít Powdered
  • 1 1/2 tsp orange extract
  • 1 tsp vanílla
  • 2 tbsp sour cream
  • 9 tbsp coconut flour
  • 1 1/2 tsp bakíng powder
  • 1/4 tsp salt
  • 1 cup chopped fresh cranberríes
  • 3 tbsp Lakanto Monkfruít powdered 
For the Glaze:
  • 1/2 tbsp butter, melted
  • 2 tbsp Lakanto Monkfruít powdered
  • splash of heavy whíppíng cream 
Directions
  1. Preheat oven to 350 degrees.
  2. Beat eggs, egg yolk, butter, Lakanto Monkfruit powdered, butter, sour cream, orange extract, and vanilla extract on medium-high until thoroughly blended.
  3. Add coconut flour, baking powder, and salt and beat again.
  4. In a small bowl, combine 3 tablespoons Lakanto Monkfruit powdered, with the chopped fresh cranberries, and stir fry until cranberries are coated.
  5. Insert the coated cranberries into the batter and stir well.
  6. Line a regular loaf pan with parchment paper.
  7. Spoon batter into loaf pan and bake for 50-55 minutes or until the knife inserted in the centre comes out clean.
  8. To make the glaze, combine the melted butter and Lakanto Monkfruit powdered and stir. Add a splash of heavy cream until the mixture is the consistency of a foliage. More will thin out, as it's poured on the bread.
  9. Pour glaze over hot Keto Cranberry Orange Bread.
  10. Enjoy!
