Easy Lemon Ricotta Pasta

Lemon Ricotta Pasta - only 4 ingredients! Ready in 6 minutes. Super quick and easy side dish. Can add some rotisserie chicken and make it a complete meal. We love this delicious pasta!

This pasta could not be any easier or any tastier! We loved it! It only has 4 ingredients! Pasta, olive, ricotta and lemon oil. This is the best side dish for pork chicken or beef. It tastes good and only requires a couple of minutes to make. You might add a little rotisserie chicken for an entire meal. Welove it and've made this a few times. We like to use whole grain pasta. Additionally it is great with a little parmesan and pepper sprinkled on top. Give this a try the next time you will need a delicious and quick pasta side.

LEMON RICOTTA PASTA #Pastarecipes
INGREDIENTS:
  • 12-oz thin spaghetti
  • 3/4 cup whole-milk ricotta cheese
  • 1-1/2 Tbsp olive oil
  • 2 leons, zested
Directions:
  1. Bring large saucepan of salted water to a boil. Add spaghetti and cook 6 minutes, until tender but still firm. Drain pasta, reserving 1/2 cup cooking water.
  2. Stir together ricotta, olive oil and the zest of 1 lemon. Add spaghetti. Season with pepper and salt. Add reserved cooking water if needed to thin.
  3. Divide pasta among 4 plates or bowls. Zest lemon on top of pasta. Serve immediately.
