Super Easy Fluffy Low Carb Keto Pancakes

Pancakes are one of the most iconic breakfast meals, and so many recipes claim to make the best. So we spent countless hours and tried out several techniques to find out what it takes to make the best fluffiest keto pancakes ever!

This low carb, fluffy pancake recipe only requires a few simple ingredients to make.

Ingredients
  • 1/2 cup almond flour
  • 2 eggs separated
  • 1/2 cup cream cheese
  • 10 drops liquid stevia natural sweetener
  • 1/4 cup hazelnut milk full fat
  • 1 tsp psyllium hysk powder
  • 1 tsp vanilla extract
Instructions
  1. Separate egg whites from yolks and place them in two different bowls.
  2. In a large bowl containing the egg yolks, add in all the wet ingredients (cream cheese, vanilla extract, liquid stevia, hazelnut milk) and mix well. Then add in the dry ingredients (almond flour, psyllium husk powder) and mix until well incorporated.
  3. Let the mixture to sit to allow the psyllium husk powder to thicken while you prep the rest of the ingredients.
  4. With the bowl containing the egg whites, beat and mix well with a hand mixer for a couple minutes, or until you get light and fluffy texture with stiff peaks.
