  • 1/2 cup almond flour
  • 2 eggs separated
  • 1/2 cup cream cheese
  • 10 drops liquid stevia natural sweetener
  • 1/4 cup hazelnut milk full fat
  • 1 tsp psyllium hysk powder
  • 1 tsp vanilla extract
  1. Separate egg whites from yolks and set them in two separate bowls.
  2. In a large bowl containing the egg yolk, add in all of the wet ingredients (cream cheese, vanilla extract, liquid stevia, hazelnut milk) and blend well. Then add the dry components (almond flour, psyllium husk powder) and mix until well incorporated.
  3. Allow the mixture to sit to permit the psyllium husk powder to thicken as you prep the remaining ingredients.
  4. With the bowl containing the egg whites, beat and mix well with a hand mixer for a few of minutes, or until you get soft and light texture with stiff peaks.
  5. Pour the whipped eggs whites in with the other mix and use a spatula to fold. Make sure to fold the ingredients together rather than over-mix (significant ). This will determine whether your pancakes come out not or .
  6. Heat a large skillet on medium to high heat and coat with cooking spray (or butter if you prefer).
  7. Gently pour pancake batter by large spoonfuls onto the skillet. Cook until bubbles form and edges are dry that takes about 3-4 minutes. Flip cook for another 2-3 minutes. Repeat until batter is completed.
  8. Serve and enjoy with butter and keto-friendly maple syrup.
