EASY CINNAMON SUGAR SWIRL CUPCAKES RECIPE

These Cinnamon Sugar Swirl Cupcakes are a dream of mine come true! There is cinnamon in the cupcake batter and layers of cinnamon sugar in the cupcake. Then, they are topped with cinnamon frosting and sprinkled with a little more cinnamon and sugar. I couldn’t stay away from them!

I left them a week before going to BlogHer Food, so I had to provide a good deal of them off to the neighbors. It was sad, but good -- I would have eaten them

It was amazing! SO much fun. But I am worn out and have a tiny cold though. I want a vacation to recuperate from my vacation.

It was fun. The best aspect of attending these conferences is currently getting to meet everyone. Blogging is such a exceptional and new thing that brings it's own challenges and a few of the things about being around so many bloggers is that we get it!

Between making new ones and seeing old friends, spending time with everyone is the best. There are so many people and I am so blessed to call more of these my friends.

INGREDIENTS
CUPCAKES
  • 1 2/3 cups all purpose flour
  • 1 cup sugar
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup salted butter, room temperature
  • 3 egg whites
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 tbsp ground cinnamon
  • 1/4 cup sugar
CINNAMON SUGAR FROSTING
  • 1/2 cup butter
  • 1/2 cup shortening
  • 4 cups powdered sugar
  • 2 1/2 tsp ground cinnamon
  • 3/4 tsp vanilla extract
  • 1–2 tbsp water or milk
INSTRUCTIONS
  1. Preheat oven to 350 degrees.
  2. Whisk flour, sugar, cinnamon, baking soda and baking powder together .
  3. Add sour cream, egg whites, vanilla, butter and milk and blend on medium speed.
  4. Combine sugar and cinnamon .
  5. Add liners.
  6. Put 1 tablespoon of batter into each liner, spread.
  7. Sprinkle 1/4 tsp of cinnamon sugar.
  8. Repeat steps 7 and 6.
  9. Insert one tablespoon of batter.
  10. If you would like sprinkle a little cinnamon sugar. Liners should be about half full.
  11. Bake for 16-18 minutes, or until a toothpick comes out with a few crumbs
  12. Allow to cool for 1 minute, then remove to rack to finish cooling.
  13. To make the icing, beat and butter.
  14. Gradually add 3 cups of powdered sugar. Mix until combined.
  15. Mix in vanilla extract the cinnamon and 1 tbsp water.
  16. Add the rest of the sugar and blend until smooth. Add water to get the perfect consistency.
